Recipes: Low Sodium Turkey Butternut Squash Soup (Gluten Free)
This is barely a recipe, but it's quite delicious so I wanted to share. The soup came about because I had some cooked turkey breast and spinach that needed used up before it went bad. I decided soup was the perfect thing, but I was feeling kind of lazy. Luckily, I had a box of Trader Joe's Low Sodium Butternut Squash soup on hand. The low sodium soup tends to be a bit bland, so adding extra ingredients was the perfect way to perk it up. Here's what I came up with: a five-minute soup that's super delish.
Turkey Butternut Squash Soup Recipe
You need:
1 32 Fl. Oz carton of TJ's Low Sodium Butternut Squash Soup
2 cups of diced cooked turkey breast (I'm sure chicken would be fine, too)
1 can of butter beans, drained and rinsed
2 big handfuls of fresh spinach
1/4 t. ground sage
1/2 t. thyme, crumbled
Mix everything together and bring to just boiling. Serve immediately. That's it! Enjoy!

YUM! I love that soup so this recipe sounds sure to please!
ReplyDeleteI love soup, too! Next week, I'm posting my recipe for "Intuitive Soup" which isn't a recipe more like a general guideline for soup-making. This past weekend I used TJ's roasted red pepper and tomato soup to make chorizo, green bean, and tomato soup. My boyfriend said it was the best soup he's ever had!
